Ajvar is a mixture of peppers and aubergines with flavors ranging from mild to hot and is considered a specialty of Balkan cuisine. There are two variants: a sour and spicy puree made from peppers (80 percent) with aubergines and peppers, and an aubergine puree flavored with peppers, each seasoned with garlic, brandy vinegar and/or lemon, salt and sugar. Ajvar is used as an accompaniment to grilled food (especially lamb), sausages, vegetables, as a spread, and also to refine soups, stews, sauces and as a dip. Ajvar is suitable for supply crafting.
